Title: Salad of Leaves & Fruit

1lgOrange
1mdHead butter lettuce, leaves rinsed and crisped
1smHead radicchio or Belgian endive, rinsed and crisped
1cRaspberries or seedles red grapes, rinsed and drained
  Citrus dressing (recipe follows)
  Salt

Citrus Dressing: Mix together 1/4 cup orange juice, 2 tb raspberry or red wine vinegar and 1/2 ts honey.

With a sharp knife, cut peel and membrane from orange. Cut beside membrane to release segments. Discard seeds. Break lettuce and radicchio into pieces. Mix. Equally mound leaves on 4 salad plates. Top with orange segments and berries. Add dressing and salt to taste.
